Award-winning chef, global humanitarian, best-selling author … José is many things, and this fall, he’s once again taking on one of his most important roles: university professor. He’s revamping a course that he originally created in 2013 at George Washington University, entitled World on a Plate: How Food Shapes Civilization, which covers the connections between food, agriculture, labor, national security, nutrition, and more.
Along with a diverse cast of guest lecturers, including culinary anthropologist Andrew Zimmern, school lunch activist Dan Giusti, restaurant workers’ advocate Saru Jayaraman, and beyond, José will be teaching the students of GW about how interconnected the world is – and how central food is to everything.
