Truffle Festival Returns To José Andrés Restaurants

It’s one of our favorite, most decadent times of the year – Truffle Festival at José Andrés Restaurants, now through February 21! Although there are a few kinds of Spanish Black Truffles, our annual celebration highlights the Black Winter truffle. These small mushrooms are grown at the roots of hazelnut trees and are known for the publish black, veiny interiors and intensely earthy fragrance. Each season, Nacho Ramirez and his truffle hunting dogs move through the fields of Spain, tracking down the most prized variety of truffles. Then, Nacho flies them directly to our kitchens, meeting with chefs and discussing how to use this special product from España.

Throughout the D.C.-area, New York, Las Vegas, and Chicago, our restaurants are serving truffle dishes worth savoring. Here’s where to get your taste of truffles during the festival: 

You may have had chilaquiles before, but never quite like this: Up the dish’s earthy flavor by showering fresh-shaved truffles over hand-made tortilla chips topped with Monterey Jack and Manchego cheeses, creamy corn truffle salsa, wild mushrooms, tomatillo, crema, and cilantro. VISIT OYAMEL.COM

Pide (our traditional Turkish flatbread) gets an instant savory upgrade when it’s topped with a soft, runny 65-degree egg, buttery kasar (a sheep’s milk cheese), and Serrion black truffle.  VISIT ZAYTINYA.COM

To celebrate the festival, several of China Chilcano’s dishes are getting the truffle treatment, including pork siu mai (topped with flecks of gold leaf and Spanish black truffle), char siu pork lotus buns, and tiradito-style hamachi.  VISIT CHINACHILCANO.COM

Burnt, Basque-style cheese cake is a beloved dessert for it’s unique texture and rich flavor, made even more decadent when the velvety cake is topped with earthy Spanish truffles. VISIT JALEO.COM

Truffle Festival ends at Jaleo Las Vegas on February 19
